Timberwood Farm Pasture Raised Lamb
Our Lamb is from our pastured Clun Forest Sheep and it has a mild yet rich flavor
and is wonderful for any lamb enthusiast or anyone new to lamb. We sell whole
lambs, half lambs,  and we also sell individual meat cuts.  Whole and Half lambs
are only available when our lamb is processed in the fall and winter.  Individual
cuts of lamb are available throughout the year.

Note: Because our Clun Forest lamb is so lean and tender we often have to warn
customers not to overcook it.  Our lamb should be cooked until it reaches an
internal temperature of 160 - no more. Our lamb achieves its fullest flavor when
served medium-rare
Whole Lambs:
Our whole lambs are sold based on Hanging Weight.   The average hanging
weight of our lambs is between 30 and 40 lbs for a whole lamb.  This will yield
approximately 23 to 32 lbs of actual meat depending on the cuts chosen.

  • A whole lamb package includes Loin Chops, Rib Chops, Shanks, Whole
    or Half Legs, Shoulder Steaks/Chops or Ground, and organ meat.

  • The meat is cut to your specifications and individually wrapped and
    labeled. Priced at $6.00 a pound.  This lamb is available in late Fall.  The
    Next Ordering Period is Fall 2018!  
1/2 Lambs:
Our half lambs are sold based on Hanging Weight.   For 1/2 a lamb the
average hanging weight of our lambs is between 15 and 20 lbs.  This will yield
approximately 12 to 15 lbs of actual meat depending on the cuts chosen.

  • A 1/2 lamb package includes Loin Chops, Rib Chops, Shanks, 1 Whole or
    2 Half Legs, Shoulder Steaks/Chops or Ground, and Organ meat.

  • The meat is cut to your specifications and individually wrapped and
    labeled. Priced at $6.00 a pound.  This lamb is available in late Fall.   The
    Next Ordering Period is Fall 2018!
